Customer Reviews of Silpain Baking Mat 11 7/8 X 16 1/2 Inches
Silpain for bread, Silpat for cookies. Matfer's Silpat and Silpain are both wonderful nonstick mats useful in baking. In both, the base is a coarsely woven fiberglass mat which has been dipped into liquid silicone. <
> <
>The difference? Held to the light, Silpain can be seen to have perforations. These let steam from bread dough escape. Silpat lacks those perforations, which are essential for baking bread on a silicone mat if a soggy bottom is to be avoided. As a result, functionally, the two products are quite different. <
> <
>SILPAIN is suited to baking country breads, foccacia, or pizza. Place the bread on the mat. Place the mat on a baking stone, a mesh sheet/coolig rack or even the oven rack itself. While the upper range at which this is intended to be used is 475 F, the mat can also be used to freeze bakery products, just as all the silicone bakeware can. <
> <
>SILPAT is intended for use on a cookie sheet or jelly roll pan. Since cookies are much thinner, their bottoms don't get soggy--and their high sugar and fat content make sticking, not steam, the main issue. Even the most delicate cookies won't stick to a Silpat mat, and as a result, most people who have used one are immediately hooked. <

>SUGGESTON: If you don't have a Silpat mat or its equivalent, start with that one first. Unless you bake a lot of bread, you can get along without this. But it's a nice addition to a well-equipped kitchen for someone who bakes breads, especially foccacia. It cleans up easily and rolls for storage. <

>NOTE: If you have a direct-fired oven, the manufacturer says to pass this one by.
