Not My Mother's Pressure Cooker, Unfortunately I grew up using my mother's old Presto, and was really excited to see what the 21st century brought in the way of pressure cooking. This Fagor set is not at all what I hoped for. Main problem is, I have NO idea how to tell when optimum pressure has been reached, and whether it is being maintained. There is no rocker, just a valve that sputters off and on. I have burned everything I have tried to make. This is very frustrating, as I am an old pro at pressure cooking. <
> The lid is hard to get on and seal. Last night was the last straw. I somehow got the lid jammed on incorrectly and the steam was leaking out the side. It took my husband pounding on the handle with a hammer to get the stupid thing to come off. <

Fagor Splendid advantages and disadvantages
.....I am a longtime cook, skilled with old aluminum Presto pressure cookers. I received the Fagor Splendid 2-in-1 cooker as a requested gift about 3 years ago. My biggest complaint is the fancy V crosssection gasket, which stops sealing properly after about a year of use and is pricey to replace.

>.....I should also warn potential buyers that it can be tricky to operate. With my old Presto cookers, I can lock the lid on, pop on the weight, turn on the heat, and it comes up to pressure without problems. The Splendid takes more coaxing to seal properly. Locking the lid on fully without pressure in the pan results in steam leaking around the edge a large percentage of the time, even with an almost-new gasket. To reliably get a good seal, I have to disengage the seal bumper so that the seal properly fits into the lid, put the lid on partially engaged, and wait for steam to start vigorously coming out the top steam tube. I can then quickly complete the lock and put on the weight. This method works fine with a gasket less than a year old (up to about 100-200 uses). After that, it's try and try again, and eventually useless.

>.....I hardly use the shallower pan from this set, but the deep pan is wonderfully useful. It's stainless steel, not aluminum, so I don't worry about aluminum getting into the food. It's got a nice heavy bottom, and so is good for deepfrying as well as pressure cooking. The tall capacity is nice, I can parboil a whold chicken before roasting it, without clogging the vent.

>.....The complex safety features are kinda tricky to wash, but this is definitely a useful pan. Once sealed, it does a great job. I am at a mile altitude, so a pressure cooker really is needed frequently in my kitchen.
