this thing is awesome My wife bought me this smoker a couple of years ago for Christmas. I had been thinking of getting a smoker, but i had no idea such technology existed. I thought I'd just get the kind that looked like half an old trash can and do it the time honored way. I was a bit puzzled by the concept of the wood discs, which must be used, but they seem readily available and roughly the same cost of wood chips, and there is a wide variety of flavors to choose from. The recipes are vague on which wood goes with which food, so experiment and see what you like. The best thing I can say about this smoker is that even just a half hour of smoking adds a wonderful flavor to anything. Several hours of smoking and you'll have better food than you can buy anywhere. Plus, all you do is put the wood discs into the chute and they feed automatically (enough for 8 hours), so you can smoke overnight or just leave it unattended without worry for the duration of your cooking time. I have smoked salmon with NO heat using the simple curing and smoking recipe, and it is better than the most expensive smoked salmon the the best delis (for a fraction of the cost). You can't get better ribs from any restaurant than you can make in 5 hours with this smoker. This is the only smoker I've ever used, but I see absolutely no reason to ever use another kind. My only negative (and it's not really a factor anyway) is that the temp can be a little hard to regulate based on the temperature and wind conditions outside. Basically there is heat a sliding switch that controls the heat, so you have to monitor the thermostat, but it won't get so hot that anything can char, so if you like a charred crust, toss the meat on the grill to finish it up. What this adds up to is that food will cook slowly as it smokes, and be very tender! I have smoked cheese, rabbit, duck, whole turkeys, fish, whatever you can think of you can do because of the choice of heat or no heat. The smoking box is like a small fridge, and the weather stripping on the door is a getting a little worn in one corner, so that may add the heat issue. Bradley claims this is portable and can be taken along on cook outs. Well, I think it's a bit large for that, and you won't want to transport a dirty, greasy smoker back home, and there has to be electricity available where you are going. Leave it in the backyard and love it! It has been living outside with the cover on between uses for 2 or 3 years and shows little sign of weather damage. Compared to traditional smokers, this has a lot of bang for the buck and is a lot more versatile. I have recommended it to everyone I know who is thinking of a smoker.
