With its soap-white blade and black handle, Boker's ceramic chef's knife is dramatically beautiful. This is a Japanese-style chef's knife, which is the kitchen staple for Asians that the French chef's knife is for Europeans. The knife has a low tip with a broad blade and a slightly curved cutting edge. Because the edge is less curved, the knife provides little rocking action; however, for straight-down slicing and precise chopping it's superb. Lightweight but not flimsy, balanced in hand, and super-sharp, it feels like a surgeon's instrument--and it cuts as smoothly and precisely as one. The fiberglass-reinforced handle is virtually unbreakable and the handle's curved shape and thumb-groove provide a firm, comfortable grip. Very nice knife This knife is sharp, amazing see thru slices. A notch above the Boker Titanium knife. It comes with a sheath, which I use everyday to protect it. I use it to cut everything, from twigs to potato chip bags. It keeps it edge.
