Although they are sometimes used to serve chocolate mousse, these graceful little porcelain pots are really hardworking ovenproof dishes meant for cooking rich custards like pots de creme; a glorious combination of eggs, milk, sugar, and other flavorings. The custard-filled pots are placed in a water bath (bain-marie) and gently baked in the oven. The custard is served in the pot either at room temperature or chilled. Each pot holds 2-ounces, has a curved handle for easy maneuvering, and has a lid to prevent a skin from forming on the custard.
